Abstract: Common eland (Taurotragus oryx) are considered as undomesticated, and maintain their natural prey instincts, making it necessary to habituate them to routine handling. Within this study, data was collected to determine the influence of routine handling and immunocastration on the temperament of common eland. Twenty-nine common eland were divided into two groups: sub-adults (n=15; ca. 2 years old) and juveniles, and were routinely handled every two weeks, over a four-month period. Within each age group, females, males, and immunocastrated males were present. Immunocastration treatment was administered during the second and fourth handling events (2mL Improvac®/ animal). During handling, animals were individually driven through the raceway and finally restrained in a squeeze chute, where routine biological samples and measurements were collected. Faecal androgen metabolite (fAM) concentrations were measured for each event, for males only. Each animal was focally sampled for specific behaviours during the handling. A temperament score was obtained by observing the general state of the animal from the point of entering the raceway, until its exit from the squeeze chute. Generalized linear mixed models tested the influence of immunocastration, week, group, fAM concentration, and body weight on the temperament score. Immunocastration did not affect the temperament score, the general state in the squeeze chute, the order of entering the handling system, and the chute exit. However, the temperament score and the state in the squeeze chute improved overtime (less nervous). Moreover, animals with low temperament scores (calm animals) entered the system earlier and exited the system calmly over the repeated handling period. The results show that routine handling through a raceway and squeeze chute system leads to habituation and improves the ease of handling in common eland. However, immunocastration did not affects the temperament of the male common eland during handling. Authors: Abubakar S. Sensory Evaluation of Liver/Meat Pates Made from Fresh or Frozen Meat.. 2018, Small animal producers in Europe can financially benefit more from sale of value added product then from only carcasses or dissected cuts. Pâté is a traditional and popular product, which enables to process low value meat cuts and edible offal. Especially, when introducing on market a new exotic species like eland (Taurotragus oryx), sale of low valued cuts with higher collagen content is problematic. Therefore, we aimed to evaluate sensory traits of several pates made of liver and less valuable fresh or frozen meat cuts (neck, brisket and plate) of eland and cattle. Four batches of pâté made of fresh and frozen material (45 and 90 days) was tested by 35 panellists in 14 organoleptic traits. Two pâté batches consisted of chicken liver and beef or eland meat. Another two were made from eland or beef liver together with eland meat. Pâté made from fresh material including chicken or eland or beef liver together with eland meat or beef has showed mainly only differences in textural characteristics like in friability, overall texture being better scored for pâté including chicken livers. Chicken livers resulted also in higher intensity of colour. Freezing of material (meat and livers) before processing into pate resulted in worse scoring of final product being better scored for batches with chicken livers for sensory traits of overall appearance; pleasantness of taste, colour and intensity of colour; colour hue and textural friability; overall texture and of pleasantness of consistency. PINTUS, E. – KOTRBA, R. – ROS-SANTAELLA, J.El tamano de los cuernos como indicador del desarrollo sexual en el eland común (Taurotragus oryx). 2016, The aim of the present study was to evaluate the relationship between horn size and the sexual development in the male common eland. In this species both sexes have horns, although they tend to be shorter, stronger and with more pronounced spirals in the males. Because an abnormal sexual development may negatively affect the reproductive success and a poor body condition influences the horn growth, our hypothesis is the horn size indicates the sexual development of the individual. In order to test our hypothesis, we assessed three measurements of horn size, we evaluated absolute and relative testes size and testicular functions by cytological analyses on 13 no-sexually mature males. Our results indicate that horn development is positively associated with spermatogenic functions but no with testis size. In conclusion, our results suggest that horn growth and sexual development are strongly related and that the horn size is a honest indicator of the reproductive potential of the individual early on the male lifetime..

For consumers one of the most important one is its toughness, but this characteristic for game meat is often scored lower when cooked. Popularity of consumption of raw tartare is increasing among the Czech consumers. Therefore, we focused on evaluation of texture by Warner-Bratzler shear force (Instron analyser) on raw samples of eland meat to find out the best cuts. Eland bulls were slaughtered at age of 1.5 (n=6) and 3 years (n=11). Elands were captive bred, finished by neck shot at the farm and processed in slaughter house. During dissection 24 hours after the slaughter from chilled carcass we collect samples from 12 muscles. The highest values of shear force, which represents the most tough muscles, had m. sternomandibularis (395±12 N, LSmean±SE) and pectoralis profundus (227±11 N). The lowest values had m. longissimus lumborum (43±11 N), psoas major (60±13 N) and m. sartorius (67±11 N). Values below 100 N were measured also in m. semitendinosus, biceps femoris and gluteus medius. Muscles triceps brachii, quadriceps femoris, m. infraspinatus and flexor digitorum had values between 100 – 200 N. We had not found differences in shear values between samples from 1.5 and 3 years old animals during comparison of the same muscles. Dominant males whose keep harem of females must frequently fight with challengers and thus not just size, but also composition and compactness of antler is crucial to reduce breakage of antler. To grow every year big and compact antlers, the male need excessive amount of energy and minerals gained by nutrition. To intensively feed deer by concentrates has similar principles as other ruminants, e.g. cattle where overfeeding or irregular provision of concentrates can cause sub-acute or acute form of ruminal acidosis negatively influencing health and production. Because deer breeders apply usually two regimes of concentrate feeding (ad-libitum or restricted with regular serving once a day) we aimed to evaluate its influence on antler size and composition. We had 10 males with ad-libitum access to specially prepared deer pellets and second 17 males were fed by the same pellets once every second day. In both groups were one year old males and three to four years old males. We collect blood samples from vena jugularis three times, in beginning of June, July and August 2012 to monitor blood acid base balance and haematology to detect ruminal dysfunction. Both groups did not differ in any of acid base balance and haematological parameters. Ad- libitum fed group had bigger neck circumference and heavier both antlers in three to four years old males, but not in one year old ones. We had not found differences in antler length and circumferences. Ad-libitum concentrate feeding of red deer males seems to have influence on compactness of antler, but we have not finished mechanical and chemical analyses yet. We had not found any dysfunction based on the feeding regime. .
